Valentine’s Day undoubtedly feels a little different this year with COVID happening, so, with that in mind, I have rounded up a few ideas, recipes, and even an outfit to help make sure you do you this Valentine’s Day. We typically enjoy Valentine’s Day at home. Going out to eat is crowded, overpriced, rushed and we can go out any time. Plus, with the pandemic and a lower capacity allowed in restaurants, it’s a perfect year to spend the evening with that special someone at home enjoying nice (not overpriced) wine or champagne, listening to music and enjoying each other’s company without distractions. If you don’t have a “Valentine,” spreading love and kindness is still my idea of a good time. You can invite your bestie, mom, sister, dog, whoever and celebrate the month of love! Neither of those an option because of COVID? Have a virtual celebration! Cheering your bestie over zoom & an expensive bottle of wine is still a good option. Spreading kindness is always free!
Valentine’s Day Brunch
What says I love you like some Rosé & some cute, mini heart-shaped raspberry and white chocolate waffles?!?!
First, set the mood! Go buy some roses (Yes, I know they are more expensive around Valentine’s weekend, but it makes all the difference). Head on over to Home Goods, Target, or whatever home store is near you for extra Valentine’s decorations. I went to Home Goods for some heart bowls, plates, coffee mugs, & some baking utensils. So stinking cute!
Grocery Store List: sparkling Rosé, strawberries, 1 cup all-purpose flour, 3 tbsp. sugar, 1 tsp. baking powder, 1/4 tsp. sea salt, 3/4 cup milk (use whatever milk you like), 2 eggs, 1 tsp. pure vanilla extract, 1/4 cup butter (melted), 1 cup frozen raspberries (thawed), 8 oz. white chocolate (roughly chopped), 3/4 cup whipping cream, food coloring…cause they have to be pink! DUH!
Recommendations for Sparkling Rosé: Chandon-Used for this Photo Shoot (Price point around $20.00). Veuve is one of my personal favorites, ALWAYS! For my extra girls! (Price point around $60.00).
Directions for White Chocolate Waffles: 1) Preheat waffle maker according to manufacturer’s directions. 2) Whisk together flour, sugar, baking powder, and salt. In a separate bowl, whisk together milk, eggs, food coloring, and vanilla. Add milk mixture to dry ingredients and stir until almost combined. Gently mix in melted butter and raspberries. Grease waffle iron per manufacturer’s directions and cook batter. 3) Meanwhile, place chocolate in heat-proof bowl. Bring cream to a boil in small saucepan. Pour cream over chocolate and stir together until chocolate is melted and sauce is smooth. Drizzle on waffles to serve! Cut up strawberries and place them on the side for a pretty effect.
